Somewhere in a drawer is a knife you keep meaning to sharpen. You don't, because somewhere along the way sharpening turned into a project — a kit to buy, an angle to agonize over, a skill you're not sure you have. So the edge gets a little worse every week, and you quietly start reaching for scissors instead.

If you've read this far, that dread is already behind you. You know what a sharp edge actually is (Part One), why it dulls (Two), what your steel can give you (Three), the angle you're aiming for (Four), and what each tool does (Five). The method is just those five things, put in order. And the part that surprises everyone is how little sharpening it actually takes.


Three Teachers

Three Ways,
One Lesson

I didn't learn to sharpen from a manual. I learned it three times — three completely different ways, from people who'd spent their lives at the edge. That's the whole reason I can tell you the method below is simpler than it looks.

The first was production sharpening, at SOG, on a belt sander. All of the skill is in the angle — finding it, then holding it freehand while you draw the whole blade profile across a moving belt, stepping through progressively finer belts without ever burning the steel. The tips are the danger: they're the thinnest part of the edge, and half a second too long against the belt is a ruined knife. You finish on a strop — a Scotch-Brite or a leather wheel. It's far harder than it looks. They handed me a stack of reject knives to practice on, and it took about a hundred of them before my hands knew the motion. Once it clicks it's the fastest way there is to put a genuinely keen edge on a knife — and, if you don't know what you're doing, just as fast a way to ruin one. The speed cuts both ways.

The second way was the opposite of fast. Murray Carter — a seventeenth-generation Yoshimoto bladesmith, heir to a Japanese line that has forged blades since 1598 — taught me to sharpen on water stones. Slow, deliberate, and hard on the hands; the old line is that if your fingertips aren't bleeding by the end, you weren't doing it right. What comes off the stones is what he calls scary sharp, and the first time you feel an edge like that, you understand why someone would give a lifetime to it.

The third way used the humblest tool of the three. I'd come to know Kiku Matsuda — a master knifemaker from Seki, Japan's old sword town — back at SOG, where we created the Kiku line of knives the company produced. He brought me into his home in Japan and taught me to raise a hone with nothing but a leather wheel. It produced a polish, slightly convex, that I wouldn't have believed could come off a single strip of leather.

Three teachers. A power belt, a stack of water stones, a wheel of leather — tools that could not be more different. And here's the part that matters for you: the principles underneath all three were identical. Find the angle and hold it. Work until you've actually reached the edge. Move from coarse to fine. Finish by stropping the burr away. Everything that follows is just those few principles, shrunk down to something you can do at a kitchen counter in a couple of minutes. The gear changes. The fundamentals don't.


The Whole Trick

Here's the mistake almost everyone makes, and it's the reason sharpening feels like a chore: they wait until the knife is completely dull, then grind the whole edge back from scratch. That's the slowest, hardest version of the job — and it's also the one that wears the knife out.

Think back to the bevel from Part Four. Every time you lay a stone against the full width of that bevel, the steel you remove scales with how tall the bevel is — you're grinding down the entire face just to move the very edge back by a hair. Do that often and two things happen: each session eats real time, and over the years you grind the knife away. There's a better way, and it's the opposite of working harder.

Maintain early, and maintain light. The moment an edge first stops biting — long before it's "dull" — a few passes on a strop or a ceramic rod bring it right back, removing almost no steel and taking under a minute. And instead of re-cutting the whole bevel when you do need a stone, you use the micro-bevel from Part Four: tip the angle up a degree or two and lay a sliver of a fresh edge right at the apex. It's tiny, so it's fast to put on and fast to renew — and renewing that sliver is nearly all the sharpening a carried knife ever needs. You touch the full bevel maybe once a year. You touch the micro-bevel in thirty seconds, whenever it asks.

Most of your sharpening is the top rung — a strop or a rod, weekly, removing next to nothing. The coarse reset at the bottom is a once-in-a-long-while job.

The One Skill

Feel for
the Burr

If there's a single thing that separates people who can sharpen from people who just rub steel on a stone, it's this: knowing when you've actually reached the edge. The answer is a burr — and once you can feel for it, sharpening stops being guesswork.

When you grind one side of the edge all the way down to the apex, the steel has nowhere left to go, so a microscopic wire of it folds over to the other side. That's the burr. Run a fingertip gently down and off the side of the blade — away from the edge, never along it — and you'll feel a faint catch, like the lip on a sheet of cut paper. When you can feel that catch along the whole length, you know you've sharpened the entire edge, not just the easy middle. Then you flip the knife and do the other side until the burr folds back the other way.

This is also where the marker trick from Part Five earns its keep: if you're not raising a burr, color the bevel, take a pass, and look — you'll see instantly whether you're riding too high on the shoulder and never reaching the apex at all.

Always strop it off.
Raise a burr on one side, flip and raise it on the other, then remove it with light passes or a strop. The burr is how you know — and leaving it on is the most common reason a "sharp" edge dies on day one.

That last panel matters more than it looks. A burr left on the edge feels wonderfully sharp for about one cut — then it folds or tears away, and you're back to dull. It's the exact trap from Part Two: day-one keen is not the same as keen that lasts. Removing the burr is what turns a quick result into a real one.


Put It Together

The Routine

Here's the whole thing, start to finish. The first time it takes ten unhurried minutes; once it's a habit, a touch-up is two.

Find your angle. Use the marker trick to match the bevel already on the knife — color it, take one light pass, and adjust until the ink lifts evenly. Most carry knives live around 15 to 20° per side. If holding it freehand feels impossible, a guided rod system sets the angle for you — there's no shame in it.

Pick the medium for your steel. For most carry steels — S35VN included — a fine stone is all you need; reach for a coarse one only if there's damage to grind out. If your steel is a high-carbide super-steel, use diamond, or you'll polish all day without cutting.

Raise a burr on the first side. Light, even strokes at your angle — consistency matters far more than pressure. Stop when you can feel a burr along the whole edge, tip to heel. That's your proof you've reached the apex everywhere, not just the middle.

Switch sides and raise it back. Same angle, same light strokes on the other side, until the burr folds the other way along the full length. Match the work side to side and the apex stays centered.

Set the micro-bevel. Lift the angle a degree or two and take just a few feather-light passes per side. This is the durable working edge that rides on top of the keen one — and it's the part you'll renew next time instead of re-grinding everything.

Strop the burr off. A few edge-trailing passes on leather — pulling the spine-first, never edge-first — strip the wire away and polish the apex. No strop? Alternating, almost weightless passes on your finest stone do the same job.

Test it at home — the paper test. Hold a sheet of printer paper by one edge and slice down through it. A properly sharp edge bites in and parts it cleanly with no tearing or skating. A coarse, toothy finish slices best on a slight draw; a fine, polished finish push-cuts straight through. If it snags or slides off the top edge, you've got a burr still hanging on, or you never quite reached the apex — back to step three.

Sharpening isn't a once-a-year ordeal.

It's a two-minute habit you barely notice.

Keep the edge, and you never have to bring one back from the dead.


What It Means for Your Carry

A knife you can keep sharp is a knife you keep reaching for. That's the quiet payoff under all six parts of this series: not a spec, not a trick, but a blade that's ready every time you pull it out — because keeping it that way costs you a couple of minutes you hardly notice. The scissors stay in the drawer.

And it's the reason the MERINO line was built the way it was.
